污物的去除主要取決于污物在表面上的附著能力、污物的堅固程度、釀酒設備的表面類型(粗糙度、腐蝕性)、清洗方式等。消洗過程是機械作用、化學作用和溫度效應共同作用的過程。要發(fā)揮機械作用，即采用一定沖擊強度的水流沖去設備表面上的附著物，然后，清洗劑在溫度和表面活性物質(zhì)的共同作用下發(fā)揮物理、化學作用。也可用酸性或堿性清洗劑，并在清洗液中加入表面活性劑來降低設備表面附著物的表面張力，破壞污垢膜，使污物硫松、崩裂或溶解，提高清洗效果。同時提高清洗的速度，能促使清洗劑更快地進入污物內(nèi)部，使其快速膨脹并脫落。
